Mise en place
Chop 1 or 2 green onions–green and white parts–and set aside.
In a small mixing bowl, use a fork to mix the mascarpone with the ginger stir-in paste. If you're just making 1 or 2 tartines, use 1/2 the container and 2 Tbsp ginger. If you're making more than 2, use the entire container and 4 Tbsp ginger.
Slice your bread fairly thick (about 1") and arrange on your sheet pan.
Pour the sesame oil in a small ramekin or other container.
Fire up the broiler.
Using your basting brush, generously brush sesame oil on each piece of bread. Place under the broiler and toast, about 30-90 seconds (if your broiler is strong, it happens quick so don't turn your back on it).
Let the toast cool briefly. Then spread a generous schmear of the ginger mascarpone on each piece. Next, sprinkle some of the bagel seasoning on top.
Now, arrange pieces of smoke salmon and avocado on top of each toast. Sprinkle the copped green onions on top.
Finally, hit each piece with another pinch of the bagel seasoning and drizzle a little sesame oil across the top.
Not everyone digs smoked salmon, so feel free to turn this into an avocado toast.
If you have pickled ginger or wasabi on hand, that's a great way to add a little extra vinegar or spice kick.
